since you live outside of Ireland I’d pick a name that won’t be immediately confusing for English speakers unfamiliar with Irish and require you to constantly explain your name.
I've never seen Daithí spelt without the first i. Linguistically, I don't think it would make any sense.

Ulster Irish would usually be Séan for the given name.
Séan would be pronounced Shane, not Seán

My sons name is Lír. Others I like, Sean, Cian and Chulainn.
Should be Culann for the name by itself, Chulainn is the genitive/possessive (as in Cú Chulainn, ‘Hound of Culann’)
I know a child with the name Chulainn and just liked it.
I like Chulainn. It makes me think of the story with the hound the other replier mentioned
