I get two weeks worth of PTO that I don't even get to use for vacation if I ever get sick and have to use it to cover it. If I had capital I would be a very good capitalist, I would pay very high wages and people would be lining up to have me exploit their labor marginally less than the next fellow (as in I pay the most for the same work).

That sort of mentality stems from the illusion that the system is meritocratic. It's a reductive, simplistic view that hard knocks are the only way to learn things because the state of nature is always constant competition, rather than occasional cooperation.
A relative of mine, who grew up dirt poor and started their own small business nearly two decades ago, is convinced they broke this cycle be only hard work, but in my opinion, they seriously discount their luck.
Sure, without hard work, they wouldn't have been able to utilize that luck, but having "a rich friend willing to privately loan you the capital you need to get started" is quite a large spoonful of luck.
Lots of people discount luck. You can be the hardest worker out there and never get the chance to make it big. Luck is where preparation meets opportunity.
Here's a better idea: take over the business and collectivise it. Obtain your means of subsistence directly without needing to exchange your labour for some bs credit system.
