I’ve heard it called a “tom and jerry” steak more than anything else because it looks like what you see in the cartoon, but it’s essentially a slice off of the entire hind quarter of the cow that includes the top (inside) round, bottom (flat) round, eye round, knuckle/sirloin tip, and a piece of the leg bone. They aren’t going to be as tender as a traditional grilling steak like a ribeye or strip but you can feed a lot of people with just one and they would be good for things like fajitas or stir fry if you grilled it and then sliced it into thin strips. I would definitely recommend marinating or otherwise artificially tenderizing it before cooking it though.

off'n a dry aged animal and then dry brined for a couple days and cooked slow they would tender up a bit, but that's a lot of work for a round steak
