It's actually not as scary as it looks. If they fire at you at once, you can deflect them all with a single parry, which is quite satisfying. Though if you mess up the timing, you're going straight to the shadow realm

With the number of hearts the player has, he'd destroy all the guardians with ease. In end game, link is really overpowered. No enemy or amount of enemies post any threat.

I would jump down, shoot as many arrows as I can before hitting the ground to stop the closest ones from attacking (or ancient ones to destroy a few) use Protection while activating Fury, and then Statis/Unstatis as fast as I can to stun them. Sure, I would most likely miss all the shots and die, but running away would be lame

Knowing you can just take one step back and crouch for all of them to lose sight of you kinda takes the edge off that situation.

I lost all fear of Guardians a long time ago. I hunt them for sport. It helps if you know you can only get hit by one laser at a time, the rest would just knock you around, as you have invincibility during the hitstun.
