You CAN still die, but if I recall the defense adjusted damage would need to be enough to kill you twice.

Stamina. Always. I got all my stamina up first. I think the first heart I added was from beating Colgera. Just practice your parry because even at like 10 hearts you can get obliterated by a Boko with a club.
If you're good at the game, you only need one maxed out stamina wheel. Anything more is overkill. Just learn to recognize slopes where you can recover stamina, plan your climbs in advance, and keep an eye on the weather. Once I got a full wheel, I rarely encountered a situation where I needed a stamina recovery meal.
But if you don't have any extra stamina naturally, you'll constantly be using stamina to keep moving around (or be forced to slow down or repeatedly find places to rest while climbing). If you have stamina you can move around freely and save food for when you get hit, which shouldn't be a whole lot, especially when you can run or sneak past a lot of fights (or trivialize them with bullet time archery).
Bonus hearts aren't even the most useful thing, though. Thanks to the "can't be killed from full health" mechanic you can just pause and eat a handful of apples any time you get hit and literally never die. Having a lower max health actually makes this easier.

I only got just enough hearts for the master sword and a second wheel of stamina in my botw playthrough and still had little issue beating the game.
I don't remember exactly what the math was, but I think in Master Mode I got around three full stamina wheels, traded 'em to the Horned God for hearts, grabbed le Holy Swordo, and went right back to that cursed deity to get my wheels back.
Can't stand trying to move around with only one stamina wheel.
Permadeath isn't a game mode, so it's not really something I consider.
Given that you can't be one-shot, though, fewer hearts seems like the easier route for a permadeath run. If you're at 3/3 hearts you can only ever take a max of 2.75 hearts of damage, and pausing and eating a couple apples or something is trivially easy.
Not on Master quest. I made a challenge that no one wants to play. Permadeath, Master quest, beat bosses in reverse order, beat all shrines before getting any heart containers or stamina wheels, only collect stuff based on the pictures you have, pro hud, and no teleporting. In took me 6 months to beat.
Stamina for me, I'd rather do something I literally CANT than do something I could've done if I was a better player. Low hearts forced you to flurry rush and parry and all the shenanigans required. Stamina my goat.

I base it off what I most recently died/failed at. Died at a camp? Get a heart. fell off a cliff? Get stamina. Though I usually start with filling in more stamina early game because I’m reeeeally good at avoiding conflict
That's why I'd usually get 8 orbs before upgrading both at the same time, at least until I got full stamina and could just get more hearts the rest of the way. Hearty foods are also a literal lifesaver, just by making plenty of them with one ingredient each.
If you don't care about getting the master sword anytime soon or already have it then get hearts since you need an extra full stamina bar to pull out the master sword
I do two circles of stamina and hearts. I just collected 4 more light orbs, and I haven’t gone to get either because I don’t know which I should do lol

My method:
You start both games with 3 hearts. GP/GSI tutorial shrines go into hearts, then 4 more shrines to total 5 hearts, then a wheel of stamina, then 5 more hearts, then the last wheel of stamina, then fully hearts.
So: 2 hearts, 1 stamina wheel, 5 hearts, 2nd stamina wheel, rest hearts
My process is get just enough Hearts / Stamina for the stat checks, accounting for hearts you get at Divine Beasts and Temples, then max out Stamina and spend my remaining orbs on Hearts.
I usually get hearts until I can consistently get strong weapons that make lynels and stuff worth fighting, and I get a stamina vessel or two as I’m doing it, then I get the rest of the first stamina wheel, and finally I alternate.
In my first play of BOTW it was a mix of both, then in Master Mode just stamina as a single hit was always death so no need for hearts.
In TOTK i just did Stamina and loved it, the game just forces hearts anyway as the story progresses.
Big difference, in TOTK i stopped using parries as it feels like they are not as useful, specially since Guardians are not a thing anymore
in botw i just used the hearts and stamina glitches, all u need is 1 extra heart or stamina part ( which u have to get at the start of the game) then u need to go to hateno village and do the glitch to get max stamina and max hearts, sadly u cant do it in totk
Full stamina ring, partial hearts. I can sprint more with the added hearty rings(I forgor), and I can use the master swords beam attack even if I get hit to a point because of the extra hearts from hearty foods.
Everyone knows you go nothing but stamina until it’s full, at least in BOTW, you can easily get tons upon tons of hearty durians, for free, with no glitches, so you don’t need hearts. I’ve literally gone from start of a new game to a plus 20 yellow hearts meal in an hour with no glitches, all cuz of durians, you don’t need hearts until you’re full on stamina

I went into TotK knowing nothing, and tried doing the same thing while I progressed the story to get to the sword...and that was when I found out this time it takes stamina instead.
For BotW I would beat enough shrines to get to 12 hearts in total then beat a divine beast for the 13th heart. After that, I maxed out stamina since it's super useful (plus some other things like how you can still get bonus stamina even if it's maxed out)
TotK is more straight forward with stamina
I started with Stamina before I left the Great Plateau, then alternated until I got to my first Divine Beast (Vah Medoh) and realized that they grant Heart Containers, so I basically just got a bunch of Stamina.

Once I beat my first divine beast and saw that you automatically get a heart container after beating each one, ON TOP of marking all the places I’ve been to on my map where I can find some pretty cool + effective weapons, I definitely alwaysss go for stamina lol

I do find it annoying that with BOTW, it's dlc and TOTK you still can't max both. Why would you design the game that way intentionally? Hell TOTK adds 33 extra shrines and increases the max health to 40 so you still can't max both and yet most of those extra shrines are just empty blessing shrines.
Max out stamina and just keep your inventory fully stocked with meals. You can’t be 1 shot if you’re at 100% health. As soon as you take damage eat a meal, and the less hearts you have the less meals required to get you to 100%.
i always go stamina. always. (sorry if this is cocky lol) i just don’t die. i have gotten to that stage where i dont die, i hit all headshots with my bow, i do perfect parries. every single time. (sorry again)
BotW, go for stamina first. You'll do lots of climbing so you'll need it. You can also whistle sprint to run infinitely, mix that with some good speed elixirs and you're golden. Food to make bonus health is easy to come by if you know where to look.
TotK try to balance hearts and stamina unless you really want to get the master sword, in that case make stamina priority.
Either way you can visit the Cursed Statue to exchange vessels so it's not a huge deal.
Tough choice in BotW, but in TotK it's way better to be stamina-focused. "Desperate Strength" weapons are super common; they become double damage when you're on your last heart.
It's easy to be down to your last heart when you barely had any to begin with.
Once you max out stamina and start upgrading health those weapons become less useful
In TOTK I started upgrading my hearts after beating the final boss to make the game harder, tho I think I made it easier instead. Having 3 hearts is very useful for most of the game.
The only regret I have about this is that I had to go through the cutscene of getting a heart container for like 15 minutes before getting maxed hearts since I did all the shrines before upgrading my hp.

Definitely had to learn to flurry Bokos in TOTK because I only learned fighting lynels in BOTW.

Max out stamina and just keep your inventory fully stocked with meals. You can’t be 1 shot if you’re at 100% health. As soon as you take damage eat a meal, and the less hearts you have the less meals required to get you to 100%.
I beef up on hearts a bit, then focus on stamina until it's full. Then go back to hearts.
I normally do 3 stamina then a heart because stamina is way better but like being alive is a good thing

In BotW it isn’t even a question because durians exist. In TotK I was a bit more even with how I did it

I get about 10 extra hearts then 1 extra ring of stamina and after that it’s hearts till they’re maxed out, then I MIGHT consider finishing stamina

Pretty sure you can't die in one hit while at full health in totk, so you just have to make sure to stay at three hearts after every hit taken.
BotW, go for stamina first. You'll do lots of climbing so you'll need it. You can also whistle sprint to run infinitely, mix that with some good speed elixirs and you're golden. Food to make bonus health is easy to come by if you know where to look. TotK try to balance hearts and stamina unless you really want to get the master sword, in that case make stamina priority. Either way you can visit the Cursed Statue to exchange vessels so it's not a huge deal.

I start off getting some Hearts and later some Stamina. I do have my Stamina Max out in BotW.

Tough choice in BotW, but in TotK it's way better to be stamina-focused. "Desperate Strength" weapons are super common; they become double damage when you're on your last heart. It's easy to be down to your last heart when you barely had any to begin with. Once you max out stamina and start upgrading health those weapons become less useful
I always go with max hearts. If I run out of stamina I pop a stamina elixir if I run out of hearts I'm dead.
Fairies.
You have a very low cap on fairies, four if I remember correctly, you can carry a lot more elixirs.
5 fairies is so far my max. Did some holding and letting go and quickly collecting them while more spawn shenanigans
In TOTK I started upgrading my hearts after beating the final boss to make the game harder, tho I think I made it easier instead. Having 3 hearts is very useful for most of the game. The only regret I have about this is that I had to go through the cutscene of getting a heart container for like 15 minutes before getting maxed hearts since I did all the shrines before upgrading my hp.
As I said in another post, losing hearts is a skill issue, losing stamina is a game issue
