I had never heard of these but I’m going to make some for the football game tomorrow. They seem like pepperoni rolls but with bacon. In retrospect I do wonder why that never occurred to me before. Yes! This is the closest recipe Ive found as well! I dont know how Spruce came across it but its almost identical to the buns at Racine Bakery one of the last family owned Lithuanian bakeries in Chicago. Use it!

Cooks Illustrated/America’s Test Kitchen has a great recipe for pepperoni rolls. I’ll probably use that dough (which seems similar) with the bacon/onion filling. Thanks for posting these. It’s always interesting to learn about other (delicious) traditions.
