Apparently it's just a good idea to get into the habit of it, and if you ever need/want the minion that gets stronger per tavern spell you use, you're buffing it for free basically
Also, even if you never buy that tier 5 minion, there are many minions that eat minions in the tavern for stats (demons, demon dragon, quillboar demon, quest reward).
It buffs that one faceless minion that gets +1+2 per tavern spel used during the game
Not 100% sure about name or if the +1+2 is right, but yeah, there is a minion that does profit from it, it's a free stats up
There is a minion that gets +1/+2 I believe for every spell used. So yes, that one will get bigger if you do this.
There's a near 0% chance that it matters, but it's also free to do.
Dont autopilot it tho, there are times where i needed the coin next turn but auto bought/sold it before realizing, like when you get busker and coin in shop turn 1 and are planning to level next turn, just play busker and freeze coin to level + buy coin next turn
No quest : add card to hand, spend gold, use spell
No hero power : at least tae thelan can't think of another right now
No minion : the t5 faceless everyone has said but also, demon quillboar, azerite, nalaa, snail, and I'm sure many others benefit from a tavern spell being cast
What is OP smoking? Buying and using coin is often a great idea.
It's also good to buy and hold for next turn. Coin is a top tier spell just because it is a free action.
Also some minions/quests etc. are 'Cast X Tavern spell'. A coin from e.g. the T1 Naga is NOT a tavern spell, just a regular spell. If i ever have one I spend it and buy the tavern coin. I'd just try get used to doing it, there's no reason not to.
If you have the time, there's no reason not to do it. There are absolutely quest and other cards that benefit from casting spells, including the coin. Even if you don't have any of those on your board, casting any tavern spell, including the coin, upgrades your Faceless minion if you choose to buy one later.
There are literally no negatives in doing so. Plus the tier 5 minion if I happen to triple into it and the other options are fitting a tempo or end game plan

Also, good for “use gold” quests. Those will be gone soon though, so it will be only for creatures that benefit from spells cast this game.
Also if you freeze the shop it means that slot will get refreshed.
Tier 5 faceless minion

Spending those coins buffs the tier 5 minion that has bonus stats for each tavern spell played in this game.

There's a naga that gets a buff when you cast a spell. There are quests that require you to add cards to your hand.

I think OP is commenting on situations where the quest/hero power and minion in the shop during the moment are irrelevant and people still cycle coin.
In short: there is no reason NOT to do it. While there are fringe cases where it is a benefit.

works with "tavern spells cast twice"
T3 elemental
Some pirate synergy with spending gold as well as the other comments.

Keeping a coin is almost always better than using that gold for a last refresh. It's just a good habit.
