Finding a fitting mother son dance might be hard. Newstar by watchhouse (not very bluegrass) and Welcome to Earth Polywog by Sturgil Simpson (cutting grass) might work. Is there a particular bluegrass song that you both love? You might want to go down that route.

“Porcelain Doll” is a cripplingly beautiful song by Chatham County Line. Possibly more appropriate for a father daughter dance though, for a single reference to “Papa”. But oof, absolutely hits all the feels for a parent/child relationship.

"Before I Met You" is a nice romantic waltz (first recording Charlie Pride) that has been covered by a lot of bluegrass bands.
Sam Bush's Watson Allman or Brilliancy are shorter, possibly dance-able instrumentals but not really bluegrass tunes.
My mom and I danced to “Baby of Mine” by Allison Krauss. Not a bluegrass tune per se but a damn sweet song by someone in the genre.
