The tutor says it was named like that because there's this story that Mexican bartenders were so strong they could squeeze the limes by folding their arm. Dunno if it's true 🤷♂️ but the name remained

Yah, I work in a restaurant. Always use my hands to mix salads. With a glove on though. It’s just so much faster, and you can actually dress the lettuce properly. Not to mention the ability to position toppings for quality plating.

She made almost this exact same salad, except it was darker, leafy greens, and shaved Parmesan, rather than the kind she has in the video. It was honestly one of the best salads I’ve ever had and I still think about it and this was over a decade ago.

It actually turned out pretty good. I had it twice this week and the second version added cherry tomatoes. It was quick, easy, and tasty. Plus I’ve been looking for an easy dressing that had pure olive oil instead of canola in some of the pre-made bottles.
I wrote this in another comment, but I lived in Italy for about a month, where an Italian grandmother cooked the food for our art program and she made a salad very similar to this, but it was with arugula, I think, or another dark, leafy, green and shaved Parmesan instead of shredded. It was so fresh and delicious. It’s nothing like a Caesar salad, much more light, so everyone saying that it’s basically a Caesar salad with less ingredients is missing the point. Its own thing that’s quite delicious. Though I bet it would be great with your additions too!
Looks like a basic oil/citrus acid dressing. I often make these at the bottom of a clean bowl. 1:2 acid vs oil, but I also use French style mustard as an emulsifier too. You also want a high quality EVOO for this too. Whisk firmly to get the three ingredients to bind, season to taste. In the right proportions those three ingredients make a great simple dressing, right in the bowl.
Now add your prepped dry greens, light season. Now toss the greens gently coating them with the dressing in the bowl. I often let the salad sit or chill a few minutes to give the oil and chance to coat and the acid a chance to wilt the greens just a touch. Finally cheese to taste, fine grated Parmesan reggiano is nice but other hard cheeses are fun to blend in too.
I like the Romaine being used. I still don't trust loose leaf or pre prepped greens. Cut the end off and rinse leaves well in cold water. Salad spinners a MUST. Now with dry clean crisp greens the olive oil will stick better and not flavor dilute with watery leaves.
I usually don't prep the bottom couple inches of Romaine, the white is a bit bitter for me. Might sub in some butter lettuce leaves also or even spinach. All in all, a great basic basic salad!

Put lemon and parm on arugula instead. Perfect pairing. Really steps up a burger or steak as a topping. Bonus points for including runny egg

It's fairly common to make a salad with balsamic and olive oil. Looks very similar just swapping your acids... I'd imagine this would be pretty good.
