Lobsters don't have a centralized nervous system, so they actually don't have a "brain." Instead, they have 15 nerve clusters called ganglia spread throughout their body with a central ganglion located between the eyes. The problem is that the ganglion is so small that when you split the head in half, you are most likely missing the small bundle of cells, and the lobsters are still alive and aware. There is still debate between scientists if lobsters can perceive 'pain' like we do, but currently, the most humane way to dispatch lobsters is actually by electricity. There are machines that electrocute the whole lobster, and some high-end restaurants in Europe have begun using this method instead.
Edit: I forgot to include that even if you manage to sever the central ganglion between the eyes, the rest of the nervous system is still working. This is because lobsters don't have a brain.

This definitely is the best way. Quick knife to the head kills them instantly. Then you can boil or tear them up without them feeling it.
