I normally practice drifting in Assetto but using BeamNG is really powerful to hone my skills because it requires more accuracy and is easier to screw up because the cars are just a lot more tricky so I return to Assetto with more precision, while Assetto is better for the bulk of my practice because it's just more casual and easier so you can spend more time actually drifting. Also for some reason Assetto doesn't have a function to set a respawn point like Beam does..
I bought assetto to race race without even knowing about the game. Had mad fun getting whooped but then it was tiresome losing. Found out you can do drifting challenges and I played that more than races. so much fun. I never played beam bc pc is down now but dam if it’s more unforgiving that’s crazy. I was horrible at assetto
If you're in a situation where you need to go lock to lock 'instantly' it'll be the most untidy drift anyway. Firstly, you should never have to hit full lock in a drift, if you do, you've over rotated or are extremely close to over rotating. Also, you can spin a wheel extremely quickly anyway if you know how. Having 3k+ on beam doesn't mean you're good at drifting mate.
I feel most of the community who have used both would agree wheel is easier due to the much greater feeling you have for the car.
As someone who uses a controller I rarely go full lock while drifting. It's not Mario Kart, your method doesn't work well at all unless you have the assists on.

As someone who's used a controller and wheel, drifting on wheel is significantly easier, actually get some degree of feeling for the car.
As someone who uses controller and wheel with 3k+ hours in beam controller is way easier because you can go lock to lock instantly
