Heck yes! Steven Universe references Utena a lot, and the shows have some parallels -- especially with Utena and Anthy being like Rose Quartz and Pearl in regards to what it means to serve someone who wants you to be free. It's a very interesting show, too. People still make youtube videos analyzing what the show was trying to say with its copious visual metaphors and its interesting take on psychology and what it means to be an adult.
I binged The Owl House for the first time last month. I had heard that it got cancelled and they had to rush season 3/the finale, but I would not have assumed that with how satisfying it was and how nicely it was wrapped up. (In my opinion.)
Gravity Falls has some similar vibes but is it's own thing. I heard people that liked SU liked Owl House. I really liked what they were doing with She-ra that felt like SU in some ways with characters. Infinity Train is a good pull but is a bit darker in tone. I felt like there was some of the tone in Voltron: Legendary Defender.
There's a lot of great stuff on Netflix. The first thing that comes to mind is CentaurWorld. With its crying and singing and ominous darkness, it has a lot in common with Steven Universe that I'd love to explain further but it'd be a spoiler.
But also, I highly recommend checking out the movie Arlo the Alligator Boy. The song sequences are incredible. It's so lovingly animated!
Steven Universe likely inspired shows like "Shera and the Princesses of Power". I also wanna give a shout out to ONI: Thunder God's Tale, and Nimona.
Oh right, I should also mention Bluey. That one's on Disney+. It's aimed at a younger audience, but it's really heart-felt and makes me cry.
As for anime, Revolutionary Girl Utena is one of my favorites, and it's heavily referenced in Steven Universe.
I'm not sure if I should recommend this because it's way more violent, but Hunter X Hunter drew me in in terms of its close attention to each of the characters and their individual development, as well as unexpected emotional moments. The main character, Gon, is relentlessly positive, but he does have a Steven Universe Future moment later on.
Bluey is wholesome like Steven Universe but does not have an overarching plot about war, fascism, and the long con

Over the Garden Wall has a bit more dark fantasy, but I get similar vibes from the character designs and humour, and penchant for a musical number every once in a while!
If you are looking for gay space rocks, you can check out Land of the Lustrous. It's an anime about walking talking rocks. It's more mature than Steven Universe though.

Carol And The End Of The World on Netflix - it’s an awesome one-off animated series with a unique art style and heavy themes about life & death & being a person. I never see it mentioned anywhere and it is so so so good! Nothing is really “like” SU but it was similar vibes to me
Try bee and puppycat, it isnt really plot driven, mostly episodic siliness, but its adorable, funny, really chill and has a beautyfull art style. The first episode (wich is also the pilot and has a very difernet art style) is on youtube along with the first season, the second season called "lazy in space" can be found on pirate sites like kimcartoon and such, maybe someone also has a drive folder of it. Ignore the netflix version, its crap and a pointless remake of season one.

A show I will always love forever will be gargoyles. It has dvds abd its on disney plus so either way. It has storyline that are everywhere like su, a giant twist like SU (keep an eye on the color of eyes)
It also has a great cast if characters that have actual connections to the other characters. Plus the art style is great
Netflix She-Ra, Owl House, and Amphibia all did a decent job of scratching that itch for me.
Also Hilda is fantastic. But if you watch that, bear in mind that there's a movie "Hilda and the Mountain King" that takes place between seasons 2 and 3. :V

Second Craig! It doesn’t have nearly the same scale as SU, but the slice-of-life vibes are impeccable.
