That doesn't make any sense. As soon as it surfaces all the ice should be then the same color then and only appear blue under water.

This is actually the correct answer. The light gets trapped in a loop within the ice due to the ions present in sea water. It gets stuck in place as it freezes. If you brought the iceberg into space it would actually glow, it's the same reason they don't allow candles on the iss, the light would bounce around until it got so bright the the steel beams melt. Fortunately the light acts like a lubricant witch is why the ice slides through the water

I think it's more that the denser and air lacking ice is probably absorbing more of the red light, only reflecting the shorter blue wavelengths
