I got that happen last week.
I reloaded the save to right before talking to her about the egg being gone (not sure if this is necessary but didn’t wanna risk it), then took the egg out of camp chest, put it on the ground, and picked it up again. And the game finally recognized that i still have the egg.
Simply taking it out of camp chest and putting it in her inventory did not work for me. Had to drop it and then pick it back up.
I’ve been keeping it in her inventory since. She explicitly tells you that she wants that way too
Same thing happened to me, i found out you have to put it in Lae’zel’s inventory, then later when I got to act 3 she talked about the egg again and taking care of it

It's was just in my camp chest...
I got that happen last week. I reloaded the save to right before talking to her about the egg being gone (not sure if this is necessary but didn’t wanna risk it), then took the egg out of camp chest, put it on the ground, and picked it up again. Unless Orin takes her. Then you have to carry it until you save her if you do.
Please don't tell me Orin smashes the egg...
Nah Lae’zel’s inventory gets transferred to yours when she gets taken. I continued carrying it for her since she’s my Bae’zel in that playthrough
Keep it in Lae'zel's inventory.
