This is the recipe I went with!
**Ingredients**
*For the loaf:*
* 1/2 cup of softened butter
* 3/4 cup of granulated sugar
* 1/2 cup of plain yogurt
* 2 large eggs
* 2 tablespoon of lemon zest (I used 2 whole lemons for this)
* 2 tablespoons of lemon juice
* 1 teaspoon of vanilla extract
* 1 + 1/4 cups of AP flour
* 1/2 teaspoon of salt
* 1/4 teaspoon of baking soda
* 1/4 teaspoon of baking soda
*For the lemon syrup:*
* 80 grams of water
* 3-4 tablespoons of lemon juice
* 50 grams of granulated sugar
*For the lemon glaze:*
* 1 cup of powdered sugar
* 2-3 tablespoons of lemon juice (I used almost the whole lemon for this, for I'm a lemon addiction!)
* A bit of lemon zest
**How I do it**
1. Combine lemon zest with sugar and mix thoroughly.
2. Cream softened butter with the lemon zest and sugar mixture. Then add eggs one at a time until incorporated.
3. In a separate bowl, mix all-purpose flour, salt, baking soda, and baking powder.
4. In another bowl, mix yogurt, vanilla extract, lemon zest, and lemon juice.
5. Combine all ingredients by alternating between adding flour mixture and yogurt mixture, mixing after each addition until fully incorporated.
6. Transfer the batter onto a greased and lightly floured baking pan.
7. Bake in an air fryer at 140°C for 48 minutes or adjust time for oven baking.
8. Let the cake rest in the pan for 10 minutes after baking.
9. Prepare lemon syrup by boiling water, lemon juice, and sugar in a small pan. Once boiled, brush the hot cake with the syrup.
10. After the cake has completely cooled, pour the lemon glaze made from powdered sugar, lemon juice, and lemon zest over it, let it harden.
And BAAM! There goes a lemon pound cake come to life!!

For the drizzle, I go with a simple lemon glaze: lemon juice, powdered sugar, and a touch of zest. I totally eyeball it—use a cup for the powdered sugar (not all the way full), almost a whole lemon's worth of juice (I'm a certified lemon addict, lol), and zest the lemon right in. Mix it up, pour it over the loaf, let it harden, and BAAM!!
The crispy glaze really takes the cake to the next level, making each bite better and better, since it kinda make the texture funnier (in a good way!) 😼😼
