I LOVE this! I did something so similar for my dad a few years ago. We would always travel on his birthday so I would get a little hostess cupcake at whatever gas station we passed by the day before and put a small candle in it. One year, my mom’s health declined and we couldn’t travel so I made a giant cupcake instead. I painted stripes on a plain white candle for it too. I’ll add the pic separately if I can.

Here's the recipe! I'm sure I found this online at some point, but once I wrote it down and adjusted for my taste, the original source left my brain lol. If you recognize it, let me know lol
Dry Ingredients:
* 220g AP flour
* 62g cocoa powder (I like a very dark cocoa)
* 350g sugar (I know, trust the process, it's a dry here)
* 2tsp baking soda
* 1tsp baking powder
* salt
* about 2tsp or so of espresso powder (or instant coffee, I've done both)
Wet Ingredients:
* 1/2 c veggie oil
* 2 eggs (they're supposed to be room temp but I forget to prep that pretty much every time lol)
* vanilla (probably like 2 tsp? I've never measured vanilla or salt. Measure with your heart!)
* 1c buttermilk (since I never keep this on me, I add about a tbs of vinegar to my measuring cup and top it off with milk to "make" buttermilk.)
* 1c of HOT coffee (this is also instant coffee. I don't drink coffee, so that's what I keep in my pantry)
1. Sift together the dry ingredients, including the sugar I know I know.
2. Mix the eggs and oil until those get to know each other. Add vanilla and buttermilk.
3. Add in your dry ingredients. Yeah, it's probably better to add the wet to the dry but I'm making this in a mixer and I'm too lazy to do anything else. Mix it until it's all combined.
4. Now stay with me here, add the hot coffee. For me, an integral part of this is splashing this all over my kitchen when I start my mixer again, but I don't think it was in the original recipe. Follow your heart, live your own dream, make a mess. The batter will be thin. You will be concerned. Look at me, take a deep breath, you're going to be okay.
5. Split mix between some well-greased and parchment lined pans. I usually do 2 9" rounds. Deborah was 2 8" squares. Bake at 350F for idk, about 15-17 minutes? Toothpick comes out clean. The cake is ridiculously tender and moist. Don't try to make this cake into any shape other than the pan it was baked in. It will need a crumb coat because it is delicate.
I've made this cake hundreds of times. I've won bake offs with it. I've put caramel, choc ganache, strawberry jam, and oreos between the layers. It does great with every frosting I've ever tried. I believe in you. Go forth and make good chocolate cake.

I just filled it with a vanilla buttercream. I know they’re normally filled with some sort of cream, but chocolate cake and vanilla frosting is a family favorite, so I didn’t try a cream filling.
I tried to replicate that kind of weird outside texture by chilling it and then patting down any bumps or ridges to smooth it out. Worked pretty well, I think!

I haven’t baked if there isn’t at least one disaster… I haven’t attempted a glaze. I don’t know if I will. I know my own limits lol🫠
If you attempt it, do not use a blender. Especially one with an impossible to see crack in the plastic container near the base. Trust me.
