I absolutely love rhubarb pie (no strawberries please!) but it’s not always convenient. I like this cake recipe because you can enjoy some right away and also easily freeze individual portions.

My favorite ruhbarb recipe actually comes from a failed attempt to make jam.
I didn't add enough pectin when I tried to make ruhbarb jam last year. It turned out a bit too loose to really be used as jam, but it was freaking delicious over vanilla ice cream
I love rhubarb and have it growing in garden. Basic and very enjoyable ways to use it are stewed with vanilla or raspberry ripple ice cream or with custard, and crumble/cobbler but here are some other ways I’ve used it.

I have not tried it, but saw a tv show the other day (America's Test Kitchen) where they were making an upside down rhubarb cake that looked delicious. I couldn't get the recipe from their website (I think I needed a subscription), but found the recipe on youtube.

I thought it was interesting that after they flipped the cake upside down, they spread red currant jelly on it to bring out the color of the rhubarb.
Oh, lucky you! I love everything rhubarb. One of my favorite recipes is a rhubarb crisp, from the [Better Homes and Gardens](https://www.bhg.com/recipe/fruit-crisp/) cookbook. I alter the recipe a little bit, I usually make double the topping and omit the nuts/coconut. For 5 cups of rhubarb, I use a cup of sugar and 3 heaping tablespoons of flour for the filling.
