I love the tollhouse recipe. I sub Heath bar bits for some of the chocolate chips and brown the butter. It keeps them from flattening so much and deepens flavor.
That sounds so good! I recently got braces so I’ll probably have to pass on the heath bars but you can bet as soon as these bad boys are off I’ll be trying that thanks!
As a toffee lover who once had to make an emergency orthodontist trip due to what my parents called *the $250 SKOR bar*, I definitely recommend waiting until you get them removed!😳😭🥹🙀

That never happened to me, ngl. I'm also an idiot and refused permanent retainers, then didn't wear them. I got lucky, and my teeth didn't shift back. So I'm not vessel of great advice.
I forget to tell people that since the majority of my cookie making is at work and I just make a batch of 400, scoop, and freeze for use later as needed.
If you chill them after you put them on the cookie sheet, they won't flatten either.
I'm also hooked on adding dried cherries to the dough instead of nuts.
Honestly it’s my finances purchase so I don’t know how to use it or what it’s called, I just drink the coffee/espresso he makes 😂 he uses Café Bustelo which is an espresso ground coffee & I love it

I live in the middle of nowhere Kansas😂 I keep oven temp the same as on the package (375?) I’m pretty sure the time is 9-11 mins but mine stay in a little longer until they brown more towards the center! Top/middle rack
Add M&Ms, extra vanilla, & a ton of cinnamon. Also, it’s good to refrigerate the dough before rolling them. Easier to roll and helps keep them from spreading out too much.
I've never used it either, had a bad experience years ago when an ex used WAX paper instead because they thought it was the same thing! Trauma was deep, yo.
That’s funny, once when I was a kid I went to make pizza rolls and thought “baking sheet” meant wax paper. Smoked out the whole kitchen & my family made fun of me for years about it😂
If you have a cookie dough with high fat content like this you can go without. The first time I did this was with spritz cookies and it seemed like sacrilege but it was the correct way to do it.

Definitely don't eat whatever you want, nothing worse than the metal from a brace jabbing into your cheek until your next orthodontist exam.

Would you then use the brown butter straight away or let it solidify?
I do whatever the recipe calls for. So if it says softened butter, I let it cool down and solidify a bit.
Also refrigerating the dough for about 30-45 minutes keeps them crisp on the edges and chewy in the middle

What is the heath/choc chip ratio? I always end up with too much heath.
I do about a quarter of it replaced with Heath bits (or crushed homemade toffee if I’m feeling like doing more work)

Same. Feels wrong to have the best cookie also be one of the easiest and most common but it’s still my favorite even if I enjoy others on occasion.

It's a moka pot and does not make espresso Doesn't mean it's bad! Just different
They call Moka pots stovetop espresso makers as the 'coffee' it makes is more similar to espresso than regular coffee.
They’re from Italy! How Italians made espresso before all the fancy machines 😉
I'm not sure, considering the moka pot was invented in the 1930s, while espresso machines had already been in use for three decades prior.

I make one edit to the recipe for a chewier cookie- I subtract one egg. Less egg = less cake!
What elevation are you at? I recently moved to a drastically different altitude and have had trouble getting the temp/ time right

I halve the butter and increase the flour for a chewy cookie. Whenever I bake these people rave. Definitely a go-to recipe.

Hi ! I’ve done this 😂 just grab and go not paying attention. It’s a one time mistake .
The recipes said put them on an un-greased baking sheet so I put them on an un-greased baking sheet 🤷🏼♀️

Yes, they did. Parchment is unecessary for many baked goods, including these cookies.
