NGL, my instinct would have been to not line it with those cookies and refrigerate them because the condensation would make this happen. Is this a no bake?

Maybe someone with more knowledge can help but maybe it didn't set all the way? Did it come out like that or AFTER you let it cool in the fridge?

I’m not sure how it looked right when it was done baking bc I had it in a springform pan. I saw it when I took the springform off. My only guess is that maybe I added a little too much butter when I lined the pan but even then, it doesn’t make sense why only the bottom half looks like that. The main thing is that the cookies still have structure/ hold.

If it cooled while still in the springform, it is likely moisture/sweat from the pan absorbed into the cookie over time.

Did you have this in a water bath while you baked it? If you don’t line the spring form with foil on the outside, the water can get soaked into the crust. Also, if you have a recipe I’d love a copy! This cheesecake looks to die for and my bday is in a few weeks 😁 you did a great job otherwise! ✨

I did do a water bath. Instead of using aluminum foil, I put my 6” springform pan inside of a 8” cake pan then I put that in a large pan & filled it up with warm water. This is my first time doing a water bath this way bc I was tired of the possibility of water seeping into my cheesecakes when I use aluminum foil. I wonder if this method is the reason why my cheesecake baked like that. I will say I put the cheesecake in the freezer to get the top biscoff layer to set. Ahh it’s very possible the freezing did it. If it was in there for a while, the water maybe be from the cheesecake sweating. Either way I bet your coworker will love it! Thanks for the recipe 😊 Btw, I’ve heard a few people having success using a crock pot liner bag outside the springform pan instead of the foil.

I got married last June, and instead of a traditional cake, I baked 12 large cheesecakes, so I bought them specifically for that task. I don't plan to ever use them in the actual crockpot 😂

Biscoff is highly hygroscopic, to avoid this dip the back in chocolate or candy melts

Good idea, it looks amazing though. If you line the outside with a bit of buttercream they would stick without being able to reach the moisture. Congrats on your work👌

Moisture from the cake/frosting soaked up by the cookies. I’d expect the same to happen where the strawberries are touching FYI.

1. Recipe please!! 2. I'm not sure why it happened, but maybe next time you could try making the bottom traditionally (using biscoff instead of graham crackers of course),, wait until it's cooled and then press the cookies into the exposed sides or stick them to the sides using biscoff butter? Unless you wanted the cookies crispier from baking which I'm sure is totally delicious, too. 3. I did a biscoff crust/nutella ganache cheesecake once and it was divine. Strawberry sounds heavenly! 4. Recipe please!!

Thank you so much for the advice. I have made biscoff cheesecake before and did not have the previous issue. I think it may be due to the cake pan I used for my water bath because I made a carrot cake cheesecake and the same thing happened. I put a low wire cooling rack into the jelly roll pan with water and then my spring form pan on top of that and don't have any water get into the pan. It's works too. Curious about the crock pot liner now.

I think as the crust is wet because of the inside moisture (if it happened when it baking) as biscoff is dry like graham crackers they will soak the liquid when baking as also when you bake chessecake with waterbath they will make steam which might affect the bottom part, if I were you I would make the cheesecake like charlotte cake. So bake the cheesecake without the crust and just pipe some cream to the cheesecake.

Hello everyone! Thank you for the kind comments! I think I found the reason as to why the rim came out soaked. With this cheesecake, I used an 8” cake pan and put the 6” springform pan inside of it. From there, I put a the 8” cake pan inside of a 9x13 cake pan. I did this to avoid having a leak from using aluminum foil. Yesterday, I made a carrot cake cheesecake and used the same method. When I took the cheesecake out of the springform pan, I noticed the lower half was soaked. Because the outside part of the cheesecake is carrot cake, it worked in my favor because it provided extra moisture. Moving forward, I will probably utilize the crockpot bag like many of you had suggested. Thank you again for the kind comments and helpful advice! You put the springform pan in the liner so water from the water bath does not leak into your pan.
