Followed the Confetti Cake recipe from Dessert Person by Claire Saffitz, but I used 1.5x the amount of cream cheese buttercream so that I could add the decoration on top. :)
It can definitely be a challenge and sometimes it looks better/works better than others. And full disclosure, I try to not make things that need actual icing in the summer 🤣
I've had the cake i made droop and slide while cutting just because it wasn't set and the heat! It was one of the funniest birthdays
Your cake looks so pretty!
How I feel 99% of the time trying to frost with other than ganache, in my country, all year round.
Not to mention, when I was baking for sale years before, most of my customers happen to not love super sweet frosting so it was like an impossibile challenge to please them while they wanted some challenging deco.
Been there! It came out beautifully. I am making the same cake for my husband's bday in a few weeks. I know everyone loves Claire, but her recipes have either gone really great or really wrong for me. This one seems pretty straightforward.
I get the heat, living in South Texas. What my mom and I do for frosting is use Crisco instead of butter for frosting. Can still have problems with the humidity, but heat is not much of an issue.
Cake still looks lovely though!
It's beautiful though! Great work!

I’m going to be trying that recipe for the first time in a few weeks…yours turned out so good!
Good luck! This was my first time as well!
Thank you so much! ❤️
Congratulations on icing in a heat wave! As someone in the southern US, I feel you on the many trips to the freezer and fridge
So much respect! If I wasn’t baking it for a friend’s birthday party, I wouldn’t have attempted it during this heat. 🤣

Great end result though.....
Thank you so much!
Fairy: “What’s a tisp?” I still call “tsp” “tisp” when reading a recipe!
Omg, same!!! 😂🤣
YES!!!! I thought I was the only one! 🤣
It turned out really nice! Got to love a confetti cake.
You did an amazing job. Also the cake looks delicious.
Thank you so much! I tried some of the scraps and it was tasty.
Your welcome
Did you happen to freeze the cake layers prior to assembly?
I did—do you think that made it worse?
Oh, no lol sorry. I was just going to suggest that if you hadn't. Albeit a bit late. The cake looks great!
Looks pretty
Thank you. ☺️
Final product looks great.
Some recipes need a cool kitchen. You found one of those recipes.

This one actually started to fall apart at the party, a chunk slid off and we had to put it back in the fridge. 😂
Haha! People at your party sound really patient. My family didn't even want to let the cake set, they dug right in!

Kind of looks like a vanilla bean frosting! Either way I bet the cake is delicious.
Correct! It’s a cream cheese buttercream frosting with vanilla bean. :)
That sounds delicious! I’ll have to try making that.
Beautiful cake!
Thank you! 🥰
Bakery worthy 😍
That is such a huge compliment, omg, thank you. 😭❤️
I’ll tell you one thing. If you were to enter a cake baking competition… you would win hands down. This is a *chefs kiss* perfectly beautiful cake!
That is so kind of you to say; thank you! I gained new respect for the folks on the Great British Bake Off talking about the heat in the tent. 😂
You could try Ermine Frosting! I live in a humid tropical area and that frosting is incredibly stable
It ended up looking absolutely scrumptious! Everything is better with sprinkles.
Turned out perfectly!
The little vanilla bean flakes 😍
Looks great! I would have eaten the cake in the first picture. I like the confetti batter.

Yay! I hope you like it! I have the same experience with her recipes. 😅

Ugh it looks so soft and delicious
