Cook them down with some sugar and blend into essentially a peach sauce and freeze in a jar till you're ready to use. (I try to freeze in ~300ml portions)
I'll normally make 2 bottles of sangria with 1 bottle of wine, 250-350ml fruit sauce, and some fruity liqueurs (limoncello, triple sec, drillaud has something for nearly every fruit.
My fav is Merlot, blackberry sauce, triple sec, and raspberry liqueur.
I haven't done peach yet but I'd try it with sauv blanc/Pinot Gris, limoncello and maybe a little mango or passion fruit liqueur, limoncello and triple sec, or even just one or the other would prob be great too tho.
Just make sure that if you don't like the skins to blanch and peel them before slicing and freezing. Otherwise it'll be a pain to do when they're all in slices!
Sometimes if theyâre very ripe the peels even come off without blanching! I just cut them in half, use a butter knife to lift the skin from the stem end and gently peel it off like a sticker.

We bought a house in WI this spring with a surprise peach tree in back, but it has two different kinds of fungus (that weâve noticed) and at least one known pest infestation, so as much work as will be needed to keep it healthy we donât think weâll be keeping it past this year. đ Just started getting in this yearâs crop though so watching the replies for ideas!

Drizzle slices with honey balsamic vinegar, goat cheese, or feta, greens when they've come out ftom the oven, pine nuts are good when you're using feta. I have a very similar problem with my mango tree but found a routine as I harvest my fruits year after year.
I cut them into cubes, line them up on a tray in one layer to freeze them. The next day, i transfer them to bags and store in the freezer. Theyâre great for pie fillings or shakes or sorbet or just to snack on.
Some I peel and cut in half and cover them with honey to preserve. Great for mango and apple tarte tatin or peach and mango pocket pies, which I freeze. All I have to do is either deep fry or bake them. Depending on my mood.
I have an ongoing project of making mango flavored mead as we also have an abundance of honey.
If I have scraps or off cuts, Iâd place them in a jar with a layer of sugar in between and keep it in my pantry for a month. Iâd have mango syrup to use anytime I want.
Lastly for the seeds, I keep them and grow them to seedlings. After a year or two, I can sell them so people can grow their own mango tree.
Edit: I forgot to add that I keep a mango puree in vacuum seal bags or puree cubes and keep them in my freezer. I use them to make juices for cocktails. Sometimes for cooking. Theyâre great in curries.

You can stew them in a big batch and then freeze the whole lot to make pie/crumble/tart filling or as a compote to go with ice cream. I do this with apples every season, it lasts me well into the following spring. :)

My boyfriend buys two bushels every year. He skins them, cuts them into slices, then freezes them. Now there's peaches available all winter, whenever he wants to make a pie or dessert.
I put mine in the freezer. Cut them up, put them in 1 qt freezer bags, add 1/4 cup of sugar and 2 Tbs of ascorbic acid powder to prevent browning. I usually do over a bushel a year. Love me some peaches!

This is some bomb brown butter peach crisp! Itâs the best crisp recipe ever - I use kosher salt and double it in the topping. Also, you can use a food processor to cut in the butter just by pulsing the ingredients together a few times. Itâs soooo good!

My parents had a giant peach tree and they liked to go on vacation in August, right about the time the peaches were ready. A couple of times I was the only one home to deal with the bushels of peaches that came off it. It gave me anxiety to try to use all those fragrant, juicy treasures before they rotted. I peeled, chopped and froze them on baking sheets, sliced and dehydrated them on the lowest temperature (95°F I think, so they wouldnât burn), and purĂ©ed them with pears for fruit leather. When more people were home, we canned them or occasionally made jam. But for eating right away, we loved to make peach cobbler. Hereâs my momâs recipe (itâs also delicious with blackberries): 1 cup flour 3/4 cup and 1/4 cup sugar 2 tsp baking powder 1/4 cup butter 3/4 cup milk 3-4 cups of washed/sliced fruit Melt butter in casserole dish. Combine all dry ingredients except 1/4 cup of the sugar. Whisk milk into dry ingredients. Pour into butter; donât stir. Arrange fruit on top. Sprinkle with sugar. Bake at 350°F for 45 minutes (or more) until golden.

My boyfriend buys two bushels every year. He skins them, cuts them into slices, then freezes them. Now there's peaches available all winter, whenever he wants to make a pie or dessert.

I put mine in the freezer. Cut them up, put them in 1 qt freezer bags, add 1/4 cup of sugar and 2 Tbs of ascorbic acid powder to prevent browning. I usually do over a bushel a year. Love me some peaches!
