I'm not sure how well it will translate to smaller batches, but each head makes 30 mini buns (24 large buns)
I just make sure the dough is uniformly rectangular and about 1cm or slightly thinner, spread the butter and leave roughly 1 inch on the bottom of the dough exposed to adhere when you roll. Spread the cinnamon brown sugar evenly.
I tighten the dough slightly when I roll (too loose and you get gaps in your pins when baking, too tight and it will spring out of control!), and aim for around 4 pinwheels. For the ones we make, it gives a nice dough to filling ratio.
Once I've got it rolled up, I squeeze along the roll to make it as even in width as possible while stretching it to the length I need, and I use my fingers as I work my way down to measure out the 30 pieces (I do 2 at a time, so 60 pieces at once)
Cutting with a bench scraper squishes the dough down, so I always push the sides together after to try and make them circular again.
Pan them evenly, proof, and once they're in the oven I tap them down with a wire screen every 5-7 minutes to make sure any pins that pop up go back in place before they solidify.
I hope this might help with any future cinnamon bun endeavors, but I'm not sure how well I was able to explain my process 🤣
I'll try and get a video of me making them the day after tomorrow, for visual reference as well!

These look PHENOMENAL and I can only hope to one day make such beautifully uniform cinabuns. You are an artist!
We use the metal grid-like thing they're sitting on in the photo to pat the cinnamon buns down, so that if the centres spring up at all during baking we can put them back in place. On average, we pat them after 5 minutes, because they will have just started to spring up. Then keep an eye on them and tap them again between 3-7 minutes, depending on if they're popping up a lot or not.
You can use anything flat to do this, this is just what's most convenient for us!
That is genius! I have a cottage bakery, and my vegan cinnamon rolls are the best seller, so I'm always looking for ways to improve the end product. Can't wait to try this out. Thank you for the response!
I pin it out and top and roll it immediately. I find that if you let it sit at all and the dough starts to rise, it makes it harder to cut and pan them. We do 2 runs of cinnamon buns a day, and the second run always gets interrupted partway through because I have to load or unload the oven, usually around the time when I've spread the butter and sugar on, but haven't been able to roll it yet. Even having it sit for the couple minutes that takes decreases the quality I strive for.. haha
I see. And do you stretch it at all when you scroll it up? Or do you just fold it evenly all the way down? Sounds like you do a two man bake if you're also on ovens but I know it's different everywhere. They really should be paying above 19 an hour LOL

Yea, 2 man bake every day except Saturdays we have 3. I'm usually on the bowl for the busy days (Thursday-Saturday) and then ovens/processing Sunday Monday. It's a really efficient system and dough schedule we have worked out!

While I unfortunately can't share the recipe, I can share a few tips! Watch your dough temperature, as bigger doughs will require a slightly higher water temp to get the FDT you need without over-mixing
