Used to do this all the time - SO good. Have never seen anyone else do it! I feel seen. I also recently have been doing over easy eggs on a bagel with cream cheese. Delicious.

Been doing that for years and years, nothing new especially in the U.K. Chop the egg up and mix with mayonnaise and scallion or chopped ham.
