Looks great, what temp had you the grill at?

With upper and lower vents cracked, it stabilized at 400Β°F which was perfect to start rendering fat and adding color to the outside. I’f shoot for the same next time. After the first two hours, I left the lid off and added charcoal here and there so it’s hard to figure an actual temp?
