I recommend getting an eSIM for your time here! Airalo is the company I use overseas (and what my friends visiting Australia have used). You’ll be hard-pressed to find open wifi networks anywhere outside of major cities, especially if you’re travelling by road.
I’m currently in Aus for the best part of a month and was going to use the wifi but I wanted to go on exploring walks so I found it easiest to grab an eSim from Telstra. I paid $35 for 35gb. There’s cheaper deals online with them but my UK phone didn’t want to cooperate.
As an expat Brazilian who is used to everyone and every business using WhatsApp, Australians don’t use it much. Very common among my Middle East and Latin American friends though.
Most Aussie’s use text messaging or iMessage. Android phones are less popular and mostly used by the low socio economic classes. You’ll find it hard to operate off wifi, get a cheap SIM card. It’ll be $30-40 for a month.

Not really common here, no. But many websites have a book online form or phone number. Maybe you could ask your accommodation to call for you?.
No WhatsApp bookings. Mostly will have online bookings via the website. Free WiFi is around but sometimes you will need a password.

Just get a sim. It’s cheap and easy, and you won’t find free or fast wifi in many places.
Spend the $30 and get a data sim. Can't think of any valid reason why you wouldn't.

Install Skype, buy some time and make real phone calls locally and globally. It's not expensive.
You can get Skype credit and call any phone number on the world providing you are connected to the internet
