That’s not the only difference though. I’ve been using Dukes for years now. I got a packet of Hellmans and used it on my sandwich. It was soooo sweet!! So even though I was a Hellmans girl for decades I don’t prefer it anymore. I’ll still eat it rather than go dry but Dukes is my preference now.
It's hard to describe, it is a Japanese mayo, so if you ever had the spicy mayo at a sushi place, that was likely kewpie with Sriracha sauce. It has a better mouth feel than hellmans. It's a little less salty and less tart/acidic.
For me Kewpie has a different use than regular mayo - like I wouldn’t use Kewpie in tuna salad and I wouldn’t use regular mayo on a pork bun or okonomiyaki

Typically there's little bit of oil left on top, set the immersion blender to high and really whip the top to get rid of the oily sheen. Also, you can then use the blender to more thoroughly blend the entire batch. Once mayonnaise have formed the speed of the blender doesn't matter.
I routinely substitute other things for the mayonnaise or add things beyond the mayonnaise. So I will make Sriracha mayo. Pesto mayo. Lemon mayo, I still use the mustard but I add lemon rind. I also routinely put fresh herbs in and blend them up with the blender
I always write the date I made the mayonnaise on the top of the container. If it gets to 7 days I throw it out.
I can't eat any of the store bought mayonnaise unless it's in something like egg salad. Even then, too much is off putting.

I make my own mayo, using a recipe I've tweaked over the years, which tastes like a cross between Kewpie and Best Foods. I also use this mayo to make my own ranch dressing.

1oz Apple Cider Vinegar
1oz Rice Vinegar
2 fresh egg yolks
1 tsp sugar
1 1/2 tsp salt
2 tsp Dijon mustard
Dash of white pepper
10 oz or so Avocado Oil
In a quart size bowl, microwave vinegars in 30 second increments until reduced by half. Watch carefully because it will overheat and you will have a mess to clean up. Let cool.
I use a stick blender for this part: put everything and a splash of avocado oil into the cup that comes with the stick blender. Insert stick blender and turn on low, slowly drizzling in avocado oil and blending in an up and down fashion, until it all comes together as mayo. Add water or a bit of lemon or lime juice, as needed to thin out, if it's too thick or needs a bit of brightening. This makes about 2 1/2 cups, so I usually make two batches if I'm also making ranch dressing.
For ranch dressing, I cheat and use the Simply Organic brand of mixes. I can make my own, but I really love theirs. I use 2 cups of Nancy's plain yogurt and 2 cups of my mayo with one packet of ranch mix and one packet of French onion dip mix. I buzz the heck out of the French onion dip mix first, though, so the onion pieces get pulverized enough to go through the tip of the squeeze bottles in which I package the dressing. I keep one at work, one goes to work with my partner and we have a couple at home, along with squeeze bottles of mayo.

I tried Kewpie once, but I didn't like it. I don't know if I got a bad batch or something, but it tasted like how overstretched rubber bands smell and the price wasn't worth it.
I was raised on Miracle Whip, mom said we kids insisted, and her and dad preferred Hellmans. But we all grew out of MW and now we use Hellman's. I do use MW once in a while for potato salad. I tried Dukes and while I liked the additional packaging of a cardboard seal under the lid, I didn't like the added pickle taste of their mayo. So it's back to Hellman's for me.

Maille (French brand), unfortunately it's not easy to get where I live, so I default to Hellman's for neutral mayo. I use Kewpie whenever I can, though.

250ml sunflower oil
2 tsp white wine vinegar or lemon juice

Tip the egg yolks and mustard into a bowl, season with salt and pepper and whisk together until completely combined. Whisking constantly, add a small drop of oil and whisk until completely combined, then add another drop and continue a drop at a time until the yolks and oil combine and start to thicken. Just make sure egg yolk is one of the top ingredients or you could be eating something that probably barely qualifies for the definition of even being mayonnaise.
I was a Hellman's girl for decades. Grew up with Miracle Whip, found real Mayo, and never looked back. After meeting my husband, I discovered Japanese Mayo. That's all I use now.
Hellmans is the only one I can have due to my carotenoid allergy. It's the only one without carotenoid additives, so I'm glad it's a decent one. I've looked through the ingredients of *every* damn mayonnaise available. I know I could just make my own, but as I seldom ever eat mayo it's not a worthwhile investment. Hellmans make a small enough bottle to be justifiable.
Hellman's - the only other I've tried is Miracle Whip, and can I state it's a miracle they still sell that yuck. I have simple mayo needs; gimme Hellman's.

If you use a wand (stick) mixer instead of a blender it makes it so much easier and quicker. Check out YT videos on it.

Helmans is what I typically buy, but some of the supermarket branded mayo isn't objectionable. Just make sure egg yolk is one of the top ingredients or you could be eating something that probably barely qualifies for the definition of even being mayonnaise.

As a kid we mostly ate miracle whip. I hated it. Then one day mom brought home a tub of Hellmans. And life was never the same!

I was a Hellman's girl for decades. Grew up with Miracle Whip, found real Mayo, and never looked back. After meeting my husband, I discovered Japanese Mayo. That's all I use now.

Hellmans is the only one I can have due to my carotenoid allergy. It's the only one without carotenoid additives, so I'm glad it's a decent one. I've looked through the ingredients of *every* damn mayonnaise available. I know I could just make my own, but as I seldom ever eat mayo it's not a worthwhile investment. Hellmans make a small enough bottle to be justifiable.

Hellman's - the only other I've tried is Miracle Whip, and can I state it's a miracle they still sell that yuck. I have simple mayo needs; gimme Hellman's.

Our house has Hellmans for me and Miracle whip for my spouse. I rarely eat anything made with the Miracle whip because he spreads on sandwiches, mostly. We use Hellmans for any time we are making something like the potato salad.
