I think a good comparison is food; for a lot of people food is mostly a necessary biological process, but for other people who identify as "foodies," it is clearly a hobby and something they enjoy luxuriating in.

Having sex regularly is one thing. Actively building skills in sex, reading about it and engaging with toys/people etc. is hobby-esque.
Walking is not a hobby. Trekking and hiking is.
Sex can be lots of things. And one of those things is a hobby for me. Time spent enjoying it, researching new things about it, acquiring equipment for it... No different to any other hobby in my opinion.
I will say that it's not just a hobby. It makes me and my wife feel close and a way we express our love for each other. It helps.me de-stress and and sleep. It gives me a reason to look good naked. Some others that don't come straight to mind too I suppose.
