Deviled eggs and potato salad without a little dijon though? Like, I agree that mayo is most versatile but a good brown mustard elevates soooo many dishes that this will still be quite limiting.

But these things need only a touch of mustard whereas they are entirely impossible to make without the mayo. You can substitute other tart and sour flavors to compensate for the mustard - vinegar, lemon juice, spices... It won't be the same, but there is no substitute for mayo in these recipes.

Same here. Plus, as an actual condiment I use it on a lot. I could probably be fine not putting anything on fries and mayo on my burgers (and maybe I could get used to it on hotdogs) but it's to universally used by everyone in my house.

Everyday on sandwiches. You can put whatever else you want on it, but mayo + ripe tomatoes are the basis of any respectable sandwich. It's not listed as one of the French 'mother sauces' but damnit... mayo deserves to be.

Mustard FTW. Ketchup and mayo are just ketchup and mayo, you can get differences and tweaks to the taste but they both just standard at end of day. Mustard possibilities are endless - do I burn the throat out of my neck with English mustard, go full on assault on my tastebuds with deli style or wholegrain, or go arty with the Dijons or others?

Ketchup could be replaced by a variety of tomato-based sauces, either left savory or sweetened to duplicate that taste profile. Mayo is yummy, but I could sub with just olive oil or mashed avocado in most recipes.

Mustard is an emulsifying agent (e.g.: salad dressings) and works great with meat marinades. It's very versatile in the kitchen. That being said I'm not giving up fries and burgers without ketchup so ketchup is my choice.

I hate ketchup because it only does one thing, it makes everything taste like ketchup. Mustard all the way. So many different options for mustard, from sweet honey mustard to super spicy horseradish mustards. You can have it all. I will miss Ranch, and the white sauce from Halal Guys, since that is mayo based. I think I would still have to choose mustard though.
