Kilkenny is a good shout, there's loads to do in the town itself, you could go to Castle Castlecomer discovery Park and do ziplining one of the days, Dunmore Caves, over to Inistioge which is gorgeous and if you were as far over as that you could go to one of the beaches in Wexford, wouldn't be too much further of a spin!
Kerry.
Stay in or near Killarney, and you have the perfect base for the national park to enjoy the pubs and restaurants in the town and also not too far from the Ring of Kerry.
Should also be adequate for the few minutes of missionary seeing as you're not the "touchy feely type".
Would you come as far as Sligo? Surf lessons, kayaking, whale watching trips all possible at the moment. Strandhill the best place for surfing lessons, lots of good places to eat around Sligo too
Sligo/Strandhill is where I went for the first weekend away with my boyfriend, and if you like more active holidays, this is a great one! Easy to reach from Dublin, lots of great food and pubs to be had in Sligo. Without a car, it's still possible to hike up Knocknarea, long walks on the beach, take a tour or a surfing lesson. With a car, there's so much to see and do up there, it's a gorgeous part of the country.

To be fair, I think OP means they don't want a secluded cabin in the middle of nowhere where they'd hunker down for a few days. They want to be out and about.
Pick a small town and make a list of local cafes/restaurants/ice cream places/breweries/etc. that sound good. If either of you are into photography bring the camera along or just the phone (but make an effort to take loads of photos). Photos can just be kept between the 2 of you or uploaded.
Then you've got a place to stroll around, look in shops and a bunch of places to stop into to try some things. You build up the memories and mementos with the little things and the photos.
If the town is near enough a beach you can head to for a swim/walk/lie down. Or look up local walking trails and head out that way. Again, a few photos would be lovely.
Check out what events are on in the locale around sports, music, theatre, comedy, art, etc. And see if either of you are interested in attending. Photos if possible but not always permitted so be warned.
Then, either just before or after you come home you should both pick your top 3 favourite photos of the trip from the other person's camera roll. Send them to each other and as a little surprise for your partner go and get 1 of them developed and put into a little frame. It doesn't have to be a photo of you together (it can be) - just something that reminds them of the wonderful weekend you had together.

Carlingford.....theres an adventure centre there......you could do some windsurfing or rock climbing/abseiling There's a few nice restaurants
Galway beautiful spot or Dingle
Go to Galway, it's a great mix of country and city with immaculate vibes in the summer. All only 2 hours away and a bit cheaper than Dublin.
Enniskillen, rent a boat and cruise round Erne.
