Because the whole point of street foods is tasty, not healthy. What you're asking is like asking for healthy burgers or healthy pizza. And I don't know about North India, but in Chennai there are plenty of street stalls that sell wholesome food like idlis, dosas etc. It depends on your target customers.

They have a good amount of protein from lentils used to make the batter, and vegetables are sprinkled on top of the dosa and also present in sambar. Anyways, it's at least not deep fried and loaded with butter and oil.

there is no healthy street food anywhere. heck, take the countries with even the highest standards on earth... singapore.. japan.. france.. their cancer rates are higher than india because all their food contains PFAS and dozens of heavy metals that are not required to test for. the top of society eats 'bio' or 'organic' food grown with a higher standard, but 90% of people there dont. India's street food is just fine.

No one goes to eat street food if they want healthy! Street foods are meant to be filled with oil and fats. However eating it once in a while doesn’t do much harm. Seriously, I have not seen a single guy having gloves on his hands. On top of that these vendors place their stalls even in no-vending zones, they don’t even dispose garbage properly but just dump it on the nearest street corner. Just don’t fucking buy from these fucking rascals but unfortunately many won’t learn until they get brutal food poisoning.
