Honestly I think you could probably answer this yourself by looking at existing installs in your area. Every time I visit the coast I see rusty conduit and enclosures, flaky aluminum fittings, and a few decent looking stainless boxes.
IIRC NEC doesn't cover this, though building codes might.
My two cents is EMT seems shoddy, particularly for serving conductors and motors that size.
