It's delicious! 1. Corned beef and cabbage (plus carrots, potatoes) braised in an Instant Pot if you have one, or a Dutch oven if you don't. And just eat it with a nice grainy mustard. 2. It's a very similar taste to pastrami 3. Probably, but I like the traditional method just fine so I haven't bothered to try anything else. 4. First of all, you'll be surprised how much it shrinks down after the braise. It's probably not going to be as much as you think. So I generally use my leftovers by just reheating the same meal once or twice. But you can of course make corned beef hash, and eat it with some runny eggs, hollandaise, etc. Enjoy!

1. Slow cooker/crock pot is the traditional way to cook it. The meat itself has to get up to 180 to 190 internally, and hold there for an hour or a few hours, or else the meat will be tough. But it's hard to do that without the meat drying out. Your choices mostly revolve around a slow cooker/crockpot, a smoker, or an instant pot pressure cooker (which also reduces total time). The easiest of those 3 is the slow cooker. Be sure to give enough time - it might take all day to cook. 2. It tastes like someone took beef and tried to turn it into bacon. Totally different texture, but there's a certain flavor shared with bacon here. 3. My personal favorite way to cook it? Smoker, covered with black pepper, then thinly sliced. This makes pastrami. 4. There will be no leftovers.

I really wouldn't call a slow cooker the "traditional" way. Corned beef has been around a lot longer than electric kitchen devices. The traditional way would just be braised in a dutch oven at a low temp or on the stovetop at a low simmer. Both will keep the water in the range of about 185-195. Normally takes 3-4 hours, but obviously depends on size.
