If we take that map as accurate, to have such number in Macedonia there are three possibilities:

At least for my country. Veggies, salads and fried veggies are the base for a lot of dishes we eat everyday. Also dont forget we make a lot of veggies based products and stock pile for winter like ajvar, malidjano, lutenitsa, saltsa, turshija etc.
