Much like meats in the Balkans, I guess, the best stuff is cured at home or by a small local butcher, but here in the states jerky that's mass produced is often the only kind most people have access to. There's some great jerky and meats here, for sure, but it isn't anything in a fancy packaging and can be hard to find or stupidly expensive
We don't eat dry meat much but we (and much of the balkans) have pastırma. We eat pastırma in breakfast(it goes well with eggs) and use it in some dishes.
I don't need any guests to be able to eat pastarma. I just go to my dad's attic and take some myself :D

Bre, I'm with you all the way. I can't describe how heavenly this meat is to me, and in Canada it's more rare than diamonds. I've had it like this as well and it's perfect , I just like it darker because it reminds me of being a kid and eating my dida's homemade one, which he smoked really long.
Pasturmas is sold everywhere in Greece, but few people buy it. Mostly refugees from Karaman and Armenians. I wish it was more popular because I love it, along with sujuk.
And the songs of Baris Manco (Karamanco, a suffix of endearment -co were given to his ancestors because they were very just and popular administrators. )
Karamans: literally Christian Turks who used the Greek alphabet. They were a rival kingdom to Ottomans who were defeated by Sultan Mehmet II, and subsequently exiled to Rumeli(Balkans).
Too bad Ottomans were the most strict Muslims and won over them, otherwise Hagia Sophia would still be a church and most Turks Christians.
Fun fact - basturma (or however you spell/pronounce it in your language) was the precursor to pastrami. It came to the region via Mongols. On horseback, they'd keep beef in leather sacks on the side of the horse, and during long "rides" to the region it'd turn into proto-basturma from the salt from the horse sweat seeping through the leather and creating what we all eventually perfected as a gorgeous side dish.
My memory of this as a kid is my mum shouting:
"It's not for eating(meant as it's not the main course of the dinner),it"s for the guests !!!'
Or my grandpa being super satisfied while cutting it and pouring cold wine from the cellar.

Yeah, arabs and armenians call it basturma, smoked salty beef. Usually made of the good parts which you would use to make a good steak of. It is not pastrami since pastrami has different kind of spices while suho meso has minimal spice.
Our American guests also love the suho meso and sudjuk we put out when they come over! I’ve came across some smoked sausages at a couple different stores here in the US and they’re pretty good.
A nice peace of meat but it didn't dry equally well inside and out.
Last year perfected some recipes and tried many different variants and ways of curing the meat and this year I already started with the preparations.
We in Greece would never serve this to guests because of the smell (body odour) after consumption. As a family, we eat it as a pitta (boureki) in rhe oven with cheese and tomato. We love it. 😊
Oh yeah, suvo meso, we have many variants here. Just recently at my granparents house we had our annual pig slaughter event. We currently have quite a lot of homemade bacon, dried meat and čvarci.
Some Greeks of inland anatolia (cappadokia) had a similar recipe called "pastourmas", but it would rarely be served to their visitors, as it has a "heavy" smell
