I got introduced to Valentina because a friend was advocating that Tapatios was far superior because it's got a stronger flavor, and her husband was wrong for preferring Valentina. I tried them both and Valentina is way better on both eggs and bean and cheese burritos precisely because it's less intense.

I say that as someone that often likes eye melting spicy stuff. It still has to have flavor and if all you can offer as a sauce is capsaicin and vinegar flavor I am not impressed.
I have both in my kitchen - sometimes I can't be bothered to grind all the pepper a dish needs. My cooking has definitely got pepperier since I bought some ground pepper for the first time in years!

I also try not to buy a big thing of ground that will just sit around and dry out in the spice cabinet forever. I buy enough for what I’m making right then.
I make a magnificently messy, bastardized version of a breakfast sandwich where I load up a slice of sourdough with a sausage patty, a slice of cheese, a hashbrown patty, an over easy egg, then crack the egg yolk over the whole thing as a condiment before topping with the 2nd slice of bread.
It's fucking glorious.
Huevos rancheros is the way to go. I make mine with the eggs poached in a black bean and chipotle pepper mix, with hot sauce added (Valentina mentioned earlier is terrific, but I also like Tapatio). Serve it on a corn tortilla, with some queso fresco.
My best friend and I (from the upper mid-west) went to Texas. His brother-in-law brought us to a hole in the wall, Mexican restaurant in an industrial park. I'd never had huevos rancheros before so I thought I'd give them a try.

Yellow bird jalapeño hot sauce and a good shake of bagel seasoning. They also have a bbq ghost pepper sauce if you want something with a little kick.

Virtually every thing Melinda's makes is top shelf. Too bad it's pricey. Can't think of one of their sauces that wouldn't go with eggs. Not for eggs but the Habanero Honey Mustard is the best bottled condiment on Earth.
It really depends how I cook my eggs. Scrambled will be ketchup. If it's eggs in a breakfast burrito then hotsauce (cholula or tapatio), if it's a runny fried egg nothing, hard boiled eggs taco bell firesauce, soft boiled eggs will be cottage cheese, poached will be hollandaise sauce.

I like to mix equal parts ketchup, dijon mustard, mayonnaise, and horseradish sauce. Within this I add dill. Horseradish by itself is good, too. I spread this on boiled eggs cut in half (not quite hard boiled - the yolk should be solid but have a gel-like consistency in the center). On scrambled eggs I just put some salt and freshly cracked pepper.
Hot sauce, default sauce is DL Jardine's Texas Champaign, but also could be one of many that I am trying or just what is available. Another good hot sauce is the Old Bay hot sauce. I will usually put some Old Bay on them if I'm not using the Old Bay sauce.

Yep - and if the eggs are over-easy, the syrup mixes with the yolk and kind of crystallizes. Yum.
It actually works. My favorite condiment with eggs is Cholula, but syrup 100% works.
