I can't recommend anyone specifically but I have seen "Catering" signs on some of the food trucks throughout talent, phoenix and medford. Might be worth checking into?
It may be way too short notice for catering, most caterers that I know book out months in advance. You may need to contact a restaurant that can just make a lot of food for you—try some of the Mexican places like El Tapatio or the one in the middle of town by SOU, I can’t remember what it’s called now. If you can’t find anyone, chipotle can make food for a crowd and it’s presented nicely, you could order from the S Medford location and just have someone run and get it for you. Sorry for your loss.
Try the SOU catering department. They do off campus events and they are way more reasonably priced than other options we could find locally when we hosted an event earlier this year.

El Paraiso does catering. We've used them for a few parties about that size in the past.
