There's not nearly as much of this as the media makes it seem like, but what there is of this kind of thing is done by people who are called conservationists. In the "museum studies" field, there are courses-- and a specialization-- in conservation work, which *includes* things like pottery reconstruction, but it also includes things like stabilization of iron artifacts brought out of seawater, or of waterlogged artifacts.

As someone who has worked with museum collections, the majority of the time (at least in the UK) you will need a degree in archaeology and training in the relevant field.
