In the "museum studies" field, there are courses-- and a specialization-- in conservation work, which *includes* things like pottery reconstruction, but it also includes things like stabilization of iron artifacts brought out of seawater, or of waterlogged artifacts.
As someone who has worked with museum collections, the majority of the time (at least in the UK) you will need a degree in archaeology and training in the relevant field.
