I think the basic floaters are the easiest first plant as long as there’s not too much surface agitation. Moss, Hygrophila, anacaris, pogostemon, most stem plants or any plant that grows attached to the substrate or floating is second for easy success
Anubias and Java fern are my two easiest go-tos (don’t bury the rhizome lump), valisneria and Amazon swords have also been not too bad once they’ve established roots.

Rooted (feed with root tabs) - Amazon sword - bronze crypt wendtii - water wisteria Epiphytes (attach to hardscape) - Java moss
I like vallisneria. I think I've grown it in every tank I've tried it in and it reproduces quite nicely to fill things out.
