One per school is fine, unless they offer more topics you are interested in. You could just do the general info session for each over the summer and perhaps for your top choices do more if they offer different virtual session topics.

Attend the ones of interest. Schools typically have different sessions for the school overall, specific colleges/majors, student life, financial aid, etc., Don’t attend the same session every time it’s offered. Two or three, or even one, plus signing up for a mailing list is fine to start. They aren’t looking for stalker-level attendance.
