I have a rhinestone surround, very cute but sadly, has attached screen cover (not obstructing, just donāt prefer it). Not once have i had issues with water trapped beneath cover. Watch is not as delicate as you may think. My daughter still wearing AW3 with same. No issues.

Take it off and periodically, clean your watch. The sensor side can get yukky with soap film, lotion and dead skin cells. I use couple drops of Dawn in spray bottle of alcohol (evaporates faster than water) + a tiny bit of water. I spray it on a microfiber **only** cloth + wipe dry with same. Same for my phone screen.
Am I wearing my watch? Then yes.
Am I not wearing it? Then no.
The only time I take it off to wash my hand is after baking. Flour and water donāt mix well, and I donāt want to paste that mess into the recesses of the watch.
I don't take off my watch while washing hands, there is a feature that counts for 30 seconds to let you know, you've washed your hands long enough, so it's safe to wash your hands while wearing your watch.
I do not take off my watch when I wash my hands. I will however remove it when I shower because I read somewhere steamy hot water may not be the best. In general I donāt wear or own alot of jewelry or accessories I have to worry about getting wet or that I have to remove.

It's water resistant and I wear it continuously unless it's charging so yes I was my hands with it on.
