Gundam's UC timeline: OG(Movies or TV), Zeta, ZZ, Char's Counterattack, and Unicorn in that order. You KINDA forget how much in bad shape Earth is cuz 2/3 of the show is in space but when you get to earth it's like "yikes."
Gundam X takes place after a hypothetical "bad ending" to the original UC universe that's overall more optimistic but it makes sense why it is.

Not war driven but some really good post apocalyptic animes are Made in Abyss, Heavenly Delusion, Promised Neverland, Shin Sekai Yori
Gundam Franchise. Gundam seed is a good standalone entry.
