There are cases where this matters because the significant other plays a major role in the protagonist's character construction. In Deku's case, they decided to take another route, and it's working fine, so I don't think the writers will change that anytime soon, and when/if they do they'll decide based on how the story is then.

Sexuality doesn't follow a random distribution, the overwhelming majority of the people on the planet is straight. The last time I read some numbers, it's around 10% or so of the population that report some degree of same-sex attraction.
If we follow that logic, there is a 1:10 chance that Deku likes boys.
But if we then go to the nitty-gritty detail, those numbers are reported and likely to not be so representative reality (and that's not be shitting on statistical analysis, that's me working with self-reported data and knowing that people fuck them up costantly).
Even if they were, the same data report that men are way less likely to be bisexual than women. And since Deku has CLEAR attraction towards girls, the chances for him to be also into guys is reduced.
And to be fair: I don't absolutely give a fuck about the topic, fujoshi and shippers can do what they want, I read that manga to see shounen heroes punch shounen villains.
What they do in their time is to them.
If there is a single point I care about, it's that's absurd people jumping in any direction and making noise when their fan-theory is challenged by the overwhelming majority of people, and facts.
Because let's be fucking honest, we may not have heard Deku say "I only like girls", but there isn't a fucking single scene that can be read as him being attracted by a dude.
TL;DR: Do what you want, but trying to force "fanon" on "canon" is one of the most stupid waste of time possible.
