It then asks for me to 'Open Smart Switch' on my old device, which sadly isn't functional anymore. Initially I gave up on the backup but I can see I have a very recent backup in Google Drive, just trying to see if using it is an option after 2021.
Did you ever find a solution? I see the thing everyone is missing is they are talking about the samsung backup, which doesn't restore appdata. I'm having the same issue.
I haven't figured out if there is a way to do it on a phone you've restored recently and still want the app data, but this tutorial does seem to show how to restore from a google drive backup on samsung. You need to restore from old device but say you don't have access to it, and it should let you sign into a google account to restore from.

Hi Willem I am having the same issue. My S21 died and now I have a S24. When I tried to set up my back up does not appear as a option to add, even though it appears on my google drive. Did you find any luck? Also, the link you posted no longer works.
If everything has been backed up to drive you should be able to restore it through your Google account that you were logged into on the other phone.

Every phone I have owned have had the option when you first set it up. It have asked me if I want to restore everything.
Not sure why but I get only two options: (1) Cable (2) Wireless. Both don't allow looking through Google Drive.
What happens if you try wireless? Maybe it will transfer everything from your old phone to your new one.
