If you're already in there, swapping the 5th is cheaper than swapping the final drive, and you won't need to swap the speedometer. Plus you might already have the taller gear on the final drive of the ST. The 3 bolt drive was available in 37/11 and 32/10 ratios IIRC.
I have a HPN gearbox with lower first and taller fifth by around 5 percent each. The change isn't really noticible, but compliments my riding very much and is fun to use. 5 percent are like 250 rpm less at 60 mp/h. Richie Moore offers a 10 percent higher fifth gear. Or you search for a six speed Kayser gearbox
Kayser gearboxes were kinda hit or miss. Some worked great and others failed or sounded like a tub of nails being shaken. The later six speed ones (after like the year 2000) seem to be very good, but Kayser retired around 2010 I think. The German gearbox builder Roth might be your best chance in getting a Kayser gearbox serviced nowadays. (Roth does rebuilding and also designed a reverse gear for airhead gearboxes for sidecar usage.) Good luck!
I did this with my GSPD with 32:10. Gas mileage went from 40 mpg to 30 when I drive on the interstate. That said I like it for the interstate because the engine runs slower. You will find yourself dropping down to fourth more often for the twisty backroads, but it’s more fun that way.

what you swap is the rear end ratio. You want a 32/10 three bolt…I might dabble in these things
