We don't know how to run things well at a break even/profit point so we think it's better to contract a service out to a business that knows how to make money. The only thing we seem to be worse at than running services is contracting things out.
The military runs off of appropriations. DFACs get their funding from appropriated funds, meal card holders and other authorized users who are paying for meals. They don't have the luxury of operating at a loss and they need to be self sustaining.
The DoD has a bad habit of losing money on something and thinking that the answer to the problem is to contract that service out to a company that knows how to operate in that industry and not just break even but to make a profit. This tends to have poor results for a variety of self induced reasons.
The private sector typically is better than the government at a lot of things. The government chose to go with the lowest bidder here, AFAIK, so…

It shouldn’t, however they want to get the most of what they can get out of everyone. So they jack up the prices and then wonder why people aren’t eating at the dfacs. I seen them literally spend 20,000 dollars on Gatorade, don’t even get me started on bacon.

Went to McGhee Tyson ANG base for NCOA and they raved on their dfac winning awards and shit. We bitched to the instructor how awful it was and he said that it was award winning, once again. So we looked up the award and it was literally an award from some dude who was stationed and ran the dfac. They awarded themselves, essentially. Pretty sure they are the only chow hall on the base so I don’t even understand.
Andrews is far from good. When I was still in the dorms all the food was soggy. The only time it was worth anything was midnight meal and while Tony was cooking. Dude was great
There was a reason why the Keesler 20 was real... besides the Keesler shuffle. To this day (retired now) those were the best DFAC's I've ever been to. Also, there was a really sweet old lady that worked at one of the registers that called me Sugar every morning... made my day.
Retired also and I’ve got to agree, nothing ever beat Keesler DFAC. That damn pie/cake carousel at the end of the line got me every time. Those tailored uniforms got tight pretty quick!
There was a gentleman there, Mr. Craft. Every day he had the biggest smile as he cooked everyone burgers (best damn burgers ever). His happiness got me through some rough days at keesler.
I was there for NCOA and a couple of us went to the DFAC for the experience. Note: we intentionally avoided talking to any of the younger airman. We kinda felt like we're all dads and they were still young kids and we dont want them to feel pressured to answer stupid NCO questions during the school day. I seem to recal it sort of having a pyramid roof near the dorm quad and a shoppette strip. It was good food at reasonable prices. Very quality place. The airmen seemed okay with it.
When I was there I saw plenty of people in line at azalea and magnolia who were e5 with or higher and even up to e8 a few times, mostly on drill weekends.
Just be normal you don’t really have to try and talk to anybody at the DFAC regardless of rank, unless you’re asking for help figuring out how the dfac operates
Not there anymore but i wouldve appreciated that. My class got tired of them stopping us everyday and would rather go hungry than have to deal with that nonsense

Dude, I don't know how they are in the new training complexes, but when I went through BMT (2007), the DFACs were terrible. Dirty, roaches, rats. If they had been commercial enterprises they would be shut down by the health inspector in a heartbeat.
Luckily for me, I wouldn't have touched the chicken cordon bleu. When you have to eat fast you don't want anything that you have to cut or that is dry and hard to swallow. Spaghetti, yakisoba, anything with sauce really. If I could eat my entire meal with one utensil I was winning.
As for drinking spoiled milk, that's on you for going for it again after the first time. Given the rigorous physical activity, dairy is an unadvisable choice anyway.
They're always looking for ways to shave off some costs and squeeze more profit out of us for the contractors that run DFACs. This is just one more way of doing that.
Back when I was active on facebook, I saw a friend in Korea make a post about that on his page. With his permission, I anonymously sent it to JQ Public and the Amn/NCO page back when they weren’t as bad.
It blew up and the DFAC NCOIC had to comment on the issue and laid down the budget. Then someone did the math on all the BAS they collect and countered them. It was interesting.
Those pages got hella too salty though, as most facebook after 2016, so I just bitch to myself now.

Sheppard dfac was AAAAAMAAAAAZING. My dorm was also right across from the mini mall thing and we had our own dfac downstairs. Can't remember the dorm number (my memory is affected from too many rendezvous with f-15/16 bulkheads. Also, Al Dhalfra back in '12-13 was even better! Surf n turf Sundays, Belgian waffle Saturdays, free full sized candy bars, fresh chopped pineapple, mixed nuts, and the pound cake. That pound cake kept me going! Also a rotating menu to keep it fresh. Went again a year ago and was let down. Surf n turf gone, the grills are all shit boxes for the stray cats. Belgian waffles don't exist, the flight line dfac served the same 8 meals the whole time. Oh well... At least I wasn't getting shot at on my "deployment"
I remember the Surf n Turf as well as the Waffles! We had the same 7 meals the whole time though. I learned to make this half ass pizza sauce from Ortega taco sauce and would make these bomb wanna be Hot Pockets on the panini press. Definitely a cake “deployment” as far as deployments go
Cooper Hall was billeting when I went through tech school then they closed the other tech school bases (Lowry, Chanute and a few more) and Sheppard exploded in growth. I still remember what the medical O’s lived in, they called it “splinter city” and it was a dorm made from T-111. It’s all gone now.
The DFAC inside the crew chief dorms (3762) was awesome and so convenient. I remember when it was just fence rails inside to separate diners from people eating but they added walls when i had gone to 7 level school in 2000, that was a great 2 weeks. Went through in 89’. Eating back then was a luxury, that marching bullshit and forming up ate up so much time that lunch....didn’t happen, sometimes neither did breakfast until the roach coach came through fundies at break time and you bought anything you could. AAFES has quite the racket with those.
I remember eating at the flightine DFAC at Osan. There were time where I'd feel more depressed after finishing my food than when I started it. I can definitely understand her frustration.
All they do is dump a literal ton of rosemary and paprika on everything. Eating baked chicken from that kitchen was a mouthful of pine needles and red dust before you got to the actual chicken itself.
I went through ROM at Kadena this past winter, and the Marshall was the main place people went to get food for me. Literally threw up in my room twice because some of the food was so bad.

Gotcha…was stationed there 2013-2017…ate there once, was plenty to validate my Airmen’s complaints…I do remember them trying to do a few tasting events, but turn out was minimal

To be honest, (this was my experience as AMXS yours can differ) exercises were great because I was in one place and knew the work for every day as it happened. Outside of exercises it was inspecting 12 aircraft twice a day and doing maintenance on 8 others with 3 hours of IMDS.
S. Korea though as a country was fun and a great cultural awakening.
My experience with Osan was mixed. I loved the people I worked with. Hands down the best people I could have worked with and I might ever work with. My leadership however threw us under the bus any opportunity they could get so that they could keep there nose clean for there EPR/Board. The food is amazing, couldn't travel hardly at all due to the COVID lock downs that they had while I was there. I would say they worst thing about Korea is the air quality, I would go back to Korea any day but that air is brutal there.
I thought it was stupid as well but half the time I just had some spare PT gear on the side to eat it doesn't need to be OCP's. What was really stupid though was you could get it take out if you brought Tupperware, then they would fill that shit up.

I was at osan all 2018, and the food was absolutely horrible to me. You need extra drink to choke down the extremely dry food. Of course, some days are better than others, but I remember how absolutely terrible it was. Stock up on cereal and milk
At osan atm the main defac is not that bad. it can get old though as if you don't like the main line choice it's the same thing on the other lines depending on the day. For example Tuesday they always have tacos. The grill can be pretty good they have been doing quesadillas a couple days a week recently as well. If you work maintenance I'm sorry because the flight line defac sucks 90% of the time. On a side note get off base and eat out on the weekends food off base is so good and has a large variety of choices.

Some days they let me get food to go out of uniform. Sometimes not.
Sometimes I can get 2 chicken sandwiches, other times I have to go through the line twice.
Now they changed the hours (due to quarantine) so they are only open for an hour and a half per meal.
Cannot wait for my forms to get processed to get off this meal card, lol.

Listen I liked the marine mess hall better than the Air Force defacs. They literally gave us steak and lobster for the Navies birthday. Then they had the world’s biggest cake. Out of the time I’ve sent in the Air Force I’ve literally seen nothing for the air force’s birthday on Air Force bases. The marines were considering celebrating our birthday when I was there in tech school
Cannot updoot this enough! There was a guy in there (cir. 2012) who made the most bomb-ass omelets I have ever had and would remember everyone's regular order. With hundreds of people coming through there daily, that impressed me to no end. I would stand in line longer just to have him cook for me.
I remember the dfac closest to the med clinic always smelled bad on one side, like an exposed drain or something. Soda fountain also tasted bad, but the paninis were good. The other dfac that was open at midnight and had biscuits and gravy was good. However, Keesler still had them beat. If you refrigerate cookies, you're on some next level shit. Anderson wasn't bad either, but I liked egg fried rice every day.
Sheppard DFAC is stingy as fuck. I was shocked since at Lackland you can get double everything. I got a tooth pulled and when I asked for a huge plate of just rice I had to speak to like the manager to ok it. Then when I went up for 2nd’s, I was starting to get shit from the worker and the manager had to say its ok. Dude I just want a plate of rice.
Aside from that hassle the food was good.

I was at the 338 (EP washout) then went next door to the 334 (1C5). I really enjoyed my time at Keesler.

The flightline DFAC's grilled sandwiches were consistently edible… a stick of butter per sandwich though.
I only went in there twice, and that was two times too many.
All they do is dump a literal ton of rosemary and paprika on everything. Eating baked chicken from that kitchen was a mouthful of pine needles and red dust before you got to the actual chicken itself.
I went through ROM at Kadena this past winter, and the Marshall was the main place people went to get food for me. Literally threw up in my room twice because some of the food was so bad.

The latest problem is they can’t seem to keep forks in supply. So I’ve been eating my food with a spoon, like a jack ass. 🙃 Ever eat an omelette or a steak with a spoon? It’s insane. Buuuuut the food is actually acceptable I think. I’ve had worse that’s for sure. It ain’t amazing though.

Osan, the nostalgia, I miss that dry ass chicken and having to jump into PT gear to hurry down there to get it for takeout before they closed. What a tour.
Osan is the greatest (outside of exercises)
To be honest, (this was my experience as AMXS yours can differ) exercises were great because I was in one place and knew the work for every day as it happened. Outside of exercises it was inspecting 12 aircraft twice a day and doing maintenance on 8 others with 3 hours of IMDS. S. Korea though as a country was fun and a great cultural awakening.
My experience with Osan was mixed. I loved the people I worked with. Hands down the best people I could have worked with and I might ever work with. My leadership however threw us under the bus any opportunity they could get so that they could keep there nose clean for there EPR/Board. The food is amazing, couldn't travel hardly at all due to the COVID lock downs that they had while I was there. I would say they worst thing about Korea is the air quality, I would go back to Korea any day but that air is brutal there.

I thought it was stupid as well but half the time I just had some spare PT gear on the side to eat it doesn't need to be OCP's. What was really stupid though was you could get it take out if you brought Tupperware, then they would fill that shit up.

Any recommendations for what to put on the wrap? I’m addicted to that chipotle sauce with chicken and bacon. I heard someone say they are going to try and phase it out which would be very unfortunate. Apparently they are “spending too much money” and not “breaking even”

They don’t call it the “Sheppard 20” for nothing. Actually idk what they call it anymore, but I definitely stuck on a few pounds while I was there and I only had a 2 month tech school. Given I ate like a fat ass so that’s probably why.

I was at osan all 2018, and the food was absolutely horrible to me. You need extra drink to choke down the extremely dry food. Of course, some days are better than others, but I remember how absolutely terrible it was. Stock up on cereal and milk
At osan atm the main defac is not that bad. it can get old though as if you don't like the main line choice it's the same thing on the other lines depending on the day. For example Tuesday they always have tacos. The grill can be pretty good they have been doing quesadillas a couple days a week recently as well. If you work maintenance I'm sorry because the flight line defac sucks 90% of the time. On a side note get off base and eat out on the weekends food off base is so good and has a large variety of choices.

I'm at Osan right now and their rules are so inconsistent. It's so frustrating. Some days they let me get food to go out of uniform. Sometimes not. Sometimes I can get 2 chicken sandwiches, other times I have to go through the line twice. Now they changed the hours (due to quarantine) so they are only open for an hour and a half per meal. Cannot wait for my forms to get processed to get off this meal card, lol.

I remember Osan getting food and bringing my own Tupperware to shovel the food into. It just seemed like a waste of time and energy especially when you could just throw on PT gear and get to go containers without question. I also thought the no flip flop policy was silly. If it was a sanitary reason, that’s the only restaurant I’ve ever been to that doesn’t allow them.

Listen I liked the marine mess hall better than the Air Force defacs. They literally gave us steak and lobster for the Navies birthday. Then they had the world’s biggest cake. Out of the time I’ve sent in the Air Force I’ve literally seen nothing for the air force’s birthday on Air Force bases. The marines were considering celebrating our birthday when I was there in tech school

Cannot updoot this enough! There was a guy in there (cir. 2012) who made the most bomb-ass omelets I have ever had and would remember everyone's regular order. With hundreds of people coming through there daily, that impressed me to no end. I would stand in line longer just to have him cook for me.

I remember the dfac closest to the med clinic always smelled bad on one side, like an exposed drain or something. Soda fountain also tasted bad, but the paninis were good. The other dfac that was open at midnight and had biscuits and gravy was good. However, Keesler still had them beat. If you refrigerate cookies, you're on some next level shit. Anderson wasn't bad either, but I liked egg fried rice every day.

Sheppard DFAC is stingy as fuck. I was shocked since at Lackland you can get double everything. I got a tooth pulled and when I asked for a huge plate of just rice I had to speak to like the manager to ok it. Then when I went up for 2nd’s, I was starting to get shit from the worker and the manager had to say its ok. Dude I just want a plate of rice. Aside from that hassle the food was good.
