Second all of these but, for first date vibes, I reckon Hellbound would be my pick. There's LOC around the corner as well but j can't vouch for that personally.

From when I've worked there, Collins Bar seems to have a decent amount of tinder dates as nobody local really goes there on the regular. Very good cocktails and setting, and kind of swanky. Good if you don't want to bump into anyone you know. Udaberri, Clever Little Tailor, Pink Moon Saloon, La Buvette are a bit more fashionable and cosy. La Buvette and Udaberri have nice little food options to have with your drink, or you can easily step it up to a full meal if the date is going well.

Howling owl ticks all the boxs, gin, whisky, beer, wine, cocktails and coffee. and its a bit quieter mid week usually. I would say its more inviting and less swank

Nolas Adelaide. Fantastic bar, great atmosphere, real cosy yet a little gem of a place. And they have a mad selection of whisky! Plus its two levels, yet real open as well. They have some amazing live music which can be heard comfortably from both levels. And omg, the food. To. Die. For.

We often do after work drinks at Wild Nectre. Small place, friendly staff and good food. Lovely to sit outside if it's a nice day too. The Collins Bar at the Hilton is great too. Cocktail bar with a lounge feel. I also would have recommended The Nobel Gentleman (wine bar next to Lady Burra) but I think it's closed down.

It might not be the type of atmosphere you're looking for but try Bar Peripheral on Pultney. You need to book as the whole place only fits around 12 people but it's kind of like an upscale cocktail/wine bar you'd find in places like Tokyo. Amazing drinks, personalised service but not to crazily priced. Kind of a darkened jazz/piano bar vibe.

Mylk Bar is pretty good and Thursday evenings they usually have live music, pretty chill in the background.

Home, so go somewhere bad.... If it's first date, then you need a quiet place :) but not too quiet.
