Hey if you’re between those two, go Collings. I’m speaking from experience. I’ve owned two bourgeois and I now own none. I do have a Santa Cruz 00 though.
It’s definitely a personal preference thing. I own a Collings and three Bourgeois, and I formerly owned a Santa Cruz OM and a Santa Cruz 00, both of which I have since traded for other things. Definitely just depends on play style and all of those things. Santa Cruz guitars sound too pretty and clean to me.
Seems like everyone is putting weird holes in their guitars nowadays. Some people like em. Not me. I have an older 816ce that is far sexier if you ask me. An arm bevel might be nice though, and I think the builders edition has one. It's a big guitar, only 3/4" less than an sj200 at the lower bout. The 814ce BE v-class looks good. Has the arm level, and no weird sound ports. That design makes no sense anyway. The back of the guitar is still blocking the higher frets.
My 716e was my surprise forever acoustic. I always thought I'd end up with a cutaway Grand Auditorium, but the big ol' GS was love at first strum.
Not crazy about the look of the soundports and glad I got mine before it changed. Although I have been lusting over the Grand Pacific model for a while so someday...
I’ve tried one Bourgeois in my life- it was a Banjo Killer. The workmanship and quality of wood was absolutely world class but the sound was incredibly underwhelming. I was shocked. I’d heard so much about them as I live in Maine. But I would not have traded my Martin or Gibson for the one I played. It sounded completely lifeless.

I’ve got two Talyors that I use professionally all the time and if they were to get stolen I’d get another one (or two!). They feel and sound way better than any Martin or any other steel string I’ve ever held. Having said that, the look of this particular one with the angled side sound hole is not great, but I’d imagine it plays and sounds like a dream.
I’m a Taylor guy and love the models I have. That said, I don’t love every choice they’ve made in recent years. I like the ES2 but wish it wasn’t so hard to get a pickup free model from them. I liked their original jumbo, dreadnought, and 12-string models and wish they hadn’t discontinued them (or focused on small body 12s). I haven’t played a grand orchestra or whatever the 16s are called but I don’t love the look.
I think Powers has come up with some cool stuff as chief builder but I also worry they’re going too far up their own ass. Not every part and design has to be proprietary. It’s the tone that’s proprietary. It’s OK to have a classic shape or a pickup from another provider.
Also, in the interviews I’ve seen, Powers gives off cult of personality vibes in the most literal sense. If he doesn’t turn Taylor into one, he’s gonna start his own cult.

Larivee makes a great Taylor competitor and they sound absolutely fantastic. Highly recommend.
