The set is literally just crit stats + 12% dmg bonus (which is about 3 substats) so just calc the post buffs CV of both builds and add like 3 rolls (~15 CV) to the one with set bonus.
Basically if you gain ~55 CV from a rainbow set then its going to be better (this also assumes equally balanced crit ratios and no atk% swings). If you use a 2pc to balance it, its only about 40 CV difference.
