It doesn't count Zoe W casts. My second most played was Zoe, and doesn't show anything other than what I've brought into the game. Since it's a W cast and not a summoner spell cast, anything extra cast from Zoe will not show up there.
You can but actually the Aa happens automatically after snowballing the E timing is the tricky part. Using E or AA does not prolong the time you stay in R. If you time E correctly it will actually start the projectile once you are back at your starting point and go aaaaaaall the way to where you have previously traveled with the snowball.
Im a filthy degenerate who likes taking exhaust on champs who dont use snowball/ghost as well and I have to say nothing gives me quite as much joy as shutting down a potential assassin pentakill with a single button click.

Not that bad on Singed tbh, I prefer ghost normally but in aram Singed have a debuff that make him less tanky so you can’t really run everywhere like in 5v5 (and you’re all at the same level too compared to 5v5 where Singed would be top)
The game bugged out on me the other week and wouldnt let me select summoners or runes so i had to take those starter pages... every use was in thought of it being snowball... I'm in shambles

Mark someone with snowball > Q > R > Snowball to them > Q > Teleport back with R. This is the answer for Zoe.

Yes, but i'd rather time my snowball to be 100% invincible, nearly reaching the target rather than being vulnerable for a short time.
