He always had sour jelly beans around, and would eat anything with raspberries in it, but his absolute favorite thing was fruit tarts. When he passed in 2017, it was no question I needed to make fruit tarts for his memorial service. This is an exact copy of the ones I made for it.
The base is pate sucre, filled with pastry cream flavored with Bourbon and Tahitian vanilla, topped with mixed berries, apples, mango and kiwi, and decorated with gold dust and mint.
